homemade zucchini bread

What you need:             Time: 1hr 15m          Makes: 2 loaves            Recipe from: adapted from Magnolia table. 
2 1/2 cups of graded zucchini (about one whole zucchini)
2 cups of sugar
4 eggs
1 1/4 cup of olive oil
1 tablespoon of vanilla extract 
3 cups of flour
2 teaspoons of cinnamon 
2 teaspoons of baking soda
1/2 teaspoon of salt
​1 teaspoon of baking powder
1/2 cup of chocolate
Cooking spray

What You Do:
1. Preheat oven to 350 degrees and spray a bread pan.
2. Mix sugar, eggs, oil, and vanilla in a large bowl.
3. In another bowl mix the dry ingredients. (Flour, cinnamon, baking soda, salt, and baking powder)
4. Add flour mixture and zucchini to the large bowl and stir thoroughly. 
5. Slowly mix in the chocolate chips and pour into pans. 
6. Bake for 50 minutes or inserted toothpick comes out clean. 

To store wrap tightly in plastic wrap. No need to refrigerate.
