Blueberry Lemon Pastry

Ingredients

Feeds 6

– For Pastry –

1/4 cup warm Water (warm enough to activate yeast but not to warm to kill it)

2 1/4 tsp active dry Yeast

1/2 cup Milk

1 large Egg

1/4 cup Granulated Sugar

1 tsp Salt

14 Tbsp butter (cold and cut into small cubes)

2 1/2 cups All-Purpose Flour

– Cream Cheese Filling –

8 oz (1 flat block) Cream Cheese

1 Large Egg Yolk

1/3 cup Granulated Sugar

1 tsp Lemon Juice

1 tsp Vanilla Extract

2/3 cups Fresh or Frozen blueberries (if using frozen blueberries do not thaw)

– Egg Wash –

1 Large Egg

2 Tbsp Milk

– Vanilla Icing – 

1/2 cup Powdered Sugar

1 tbsp Milk or Heavy Whipping Cream

1/2 tsp Vanilla Extract

Instructions:

  1. Preheat the oven to 400ºF.

  2. Whisk together water, sugar, and yeast and let sit for five minutes. It should have small bubbles and be slightly foamy.

  3. Add in milk, salt, and egg, whisking all the wet ingredients thoroughly.

  4. In a separate bowl cut in (using a pastry cutter or knife) the cubed butter with flour. Be sure to combine it, but not melt the butter.

  5. Pour flour mixture into the wet ingredients and fold gently. You don’t want the butter to get to soft.

  6. Once the dough is a rough sticky jumble, wrap it in a flour covered plastic wrap and place in the fridge to chill while you make the filling.

  7. To make the filling whip the egg, cream cheese, lemon, sugar, and vanilla until combined. It should be a soft, light, liquidy texture.

  8. Pull out the dough out and roll into a rectangle 11x14” on a lined baking sheet, ready to go into the oven.

  9. Cut the dough the way shown in the picture below.

10. Pour cream cheese filling into the center. (It will spill over a little, so work fast.)

11. Line filling with blueberries.

12. Fold over cut edges, starting with the left side rotating between each side.

13. Bake in the oven for 18-22 minutes.

14. Meanwhile, whisk together all the icing Ingredients until well combined.

15. Once the pastry is out of the oven, spread the icing over and serve warm.
