Apple Muffins
I love apple season, but when apple season comes around there is plenty. This great breakfast food is amazing for an early morning, but adding nutritious apples to the mix!!!
Ingredients
2 cups of flour
1 cup of sugar
1 tsp of baking soda
1/2 tsp of salt
2 eggs
1/2 cup of melted butter
1 tsp of vanilla extract
2 apples peeled and chopped into small cubes
–For Crumb Topping–
1/3 cup brown sugar
1 tbsp flour
1/2 tsp of cinnamon
2 tbsp of cold cubed butter
–For Glaze–
1 cup of powdered sugar
3 tbsp of milk
1 tsp of melted butter
1/2 a tsp of vanilla extract
What To Do
Preheat the oven to 375˚F.
In a large bowl mix together the dry ingredients; flour, sugar, baking soda, and salt.
In a smaller bowl whisk eggs, melted butter, and vanilla.
Fold in the apples being careful not to over mix it.
Grease muffins pans and fill with a 1/4 a cup of batter.
Mix the brown sugar, flour, and cinnamon, in a small bowl. Cut in the cubed butter until it becomes a crumble.
Sprinkle crumble over the top of the muffins and bake for 20-25 minutes or until an inserted toothpick comes out clean.
In a small bowl whisk together powdered sugar, milk, melted butter, and vanilla.
Drizzle over cooled muffins.
