Coffee Cake
This has been one of my favorite discoveries! When I first made coffee cake I knew it would be one of my favorite breakfasts. I thought it would be one of the more complex treats but it’s so simple. I’ve done it so much I think I can whip it up in 20 minutes flat! I feel like coffee cake is one of those foods you would think of as being fancier or more of a treat, but it really is so easy and doesn’t require much time, effort, or supplies!
Ingredients
Streusel
3/4 cups sugar
1/2 cup flour
2 tsp ground cinnamon
5 tbsp cubed butter cold
Cake
1 stick or 8 tbsp melted butter
3/4 cup of sugar
1 egg
3/4 cup of milk
2 tsp Vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt
What To Do
In a medium sized bowl stir together sugar, flour, and cinnamon. Once well combined add in the cubed butter. Using you fingers mix and mash the streusel until in becomes crumbs.
Store in the refrigerator until it’s time to use it.
Preheat the oven to 350˚F and grease a 9x9’’ baking dish.
In a stand mixer fitted with whisk attachment, cream the butter and sugar until airy. Add the egg, milk, and vanilla and whisk on low.
Once it has all combined add the flour, baking powder, and salt all 1 at a time. Whisk until well incorporated and it has become a light batter.
Pour into prepare dish and spread it out evenly.
Sprinkle chilled streusel over until it has a thick covering.
Bake for about 35 minutes or until a tooth pick is inserted into the middle and come back out clean.
Enjoy warm with a cup of coffee!
